What will Kentucky Book Festival visitors find on your table?

My first book and my only book for this event, “Waste into Taste: turning scraps into delicious dishes.” Creativity is taking a second look at something. For me, some of my best and most loved dishes resulted from this practice. In Waste into Taste, I present an inspiring collection of practical techniques and delicious recipes, some new, some honed throughout my distinguished culinary career, for utilizing scraps of various foods to eliminate waste and lower grocery costs. I will also have an iPad set up with a slide show of pictures from the book as well as other items that I have made.

 

Whom do you invite to stop by? Who will benefit from reading your book?

The book is written for home cooks and professional cooks alike. I wanted readers to be stimulated and inspired to think about what can be done with food scraps of all kinds. Some of the recipes may not be suited for a home kitchen (restaurants often have more scraps of certain items i.e. potato skins/peelings). However, other ideas may come from that same recipe that will work in a home kitchen. I invite anyone who is interested in cooking to visit my table.

Could you please tell us something curious about you and/or your book?

The book started as a spreadsheet that I affectionately named “Waste into Taste. I was reflecting on all the ways we utilized scraps in the restaurants I had managed. My wife thought that it would make a great book, so when I started brainstorming topics to write about, it seemed like an obvious choice.

 

Is this your first time participating in Kentucky Book Festival? If yes – what are you looking forward to the most? If you’ve participated before – what was your favorite experience at the Festival?

As a first time participant and a new author, I am thrilled to participate in the Kentucky Book Festival. I am looking forward to signing books and talking with readers about restaurant/chef life, food waste, cooking, and the overall concept of “Waste into Taste.” I also hope to talk to other authors about their experiences. Receiving a badge with Author under my name will be pretty awesome.
